Effect of Formate on the Morphology and Acid Production of the Bifidobacterium Species

The production of formate during fermentation is variable among different Bifidobacterium strains. Of the 71 Bifidobacterium strains tested, 21 strains produced formate. The effect of formate on the morphology and acid production was studied using nonformate producing strains; Bifidobacterium Bfl, BGN4, JR20, and SH5. Noticeable sizereduction was observed in Bfl, dose dependently, from 4 hr after the inoculum was cultured in the new formate medium. The continued presence of formate during successive subcultures brought about a size reduction in BGN4 and JR20. Formate reduced lactate production at a greater degree than the acetate production, suggesting that it may affect the size, acid production or physiology of the nonformate producer. Considering that formate is constantly present in the formate-producing strains, its effect on the morphological change and acid production observed here may contribute to the understanding of the physiology of the Bifidobacterium.
